Abstract
Darbo tikslas: parinkti tinkamus funkcionaliuosius priedus naujo gaminio kūrimui, sukurti jautienos dešrelių receptūras su funkcionaliaisiais priedais ir be jų; įvertinti gauto gaminio su funkcionaliaisiais priedais ir be jų RR sudėtį, apskaičiuoti omega-3 ir omega-6 RR santykį, AI, TI; įvertinti juslines savybes (atlikti profilinę analizę) ir priimtinumą; atlikti gautų rezultatų statistinę palyginamąją analizę, pateikti rekomendacijas gamintojams.
Rezultatai: Vertinant riebalų rūgščių kiekį tirtuose mėginiuose daugiausiai SRR - 46,11 proc. (p>0,05) nuo BRRK nustatyta mėginyje, kuriame nebuvo įterpta jokių pridėtinės vertės priedų. Didžiausias statistiškai reikšmingas procentinis SRR kiekio sumažėjimas (37,11 proc. nuo BRRK), kai p<0,05, nustatytas gaminyje, į kurio masę prieš terminį apdorojimą buvo įterpta 10 g linų sėmenų aliejaus ir 5 g linų sėmenų sėklų. Taip pat šis mėginys pasižymėjo dideliu omega-3 RR kiekiu – 8,45 proc. nuo BRRK. Omega-6 RR didžiausias kiekis užfiksuotas jautienos dešrelėse su 10 g jūros dumblių aliejumi ir 5 g linų sėmenų sėklomis – 26,87 proc. nuo BRRK. Įvertinus aterogeniškumo indeksus, mažiausias nustatytas „JD2“ gaminyje, t.y. - 0,45, lyginant su kontroline grupe indeksas 37,5 proc. mažesnis. Trombogeniškumo indeksas „JD2” gaminyje - net 48,28 proc. mažesnis nei kontrolėje (p<0,05). Įvertinus naujai sukurtų gaminių priimtinumą, didelių pokyčių nenustatyta, bet visi gaminiai su pridėtinės vertės morkų priedu buvo labiau priimtinesni, nei kontrolinės grupės. Iš tirtų mėginių geriausiomis juslinėmis savybėmis pasižymėjo „JD2“ gaminiai, su 5 g linų sėmenų aliejaus, 5g linų sėmenų sėklų, 60 g morkų išspaudų priedu.

Goal of the thesis: to select suitable functional additives for the development of a new product, to create recipes for beef sausages with and without functional additives; to evaluate the fatty acids (FA) composition of the obtained product with and without functional additives, to calculate the ratio of omega-3 and omega-6 FA, AI, TI; evaluate sensory properties (perform profile analysis) and acceptability; To perform a statistical comparative analysis of the obtained results, to present recommendations to manufacturers.
Results: In terms of the fatty acid content of the samples tested, the highest SFA was 46,11 % (p>0,05) of the BRRC found in a sample where no added value added additives were added. The largest statistically significant percentage decrease in the amount of SFA (37,11 % of the TFA) when p<0,05 was found in a product in which 10 g of flaxseed oil and 5 g of flaxseed seed were added to the mass prior to heat treatment. This sample also showed a high content of omega-3 FA - 8.45% of TFA. The highest levels of Omega-6 FA were recorded in beef sausages with 10 g of algae oil and 5 g of flaxseed seeds – 26.87% of TFA. After accounting for the atherogenicity indices, the lowest index was found in the JD2 product, i.e. 0.45, compared to the control group, the index was 37.5% lower. The thrombogenicity index in the JD2 product are 48.28% lower than in control (p<0.05). No significant changes were observed in the assessment of the acceptability of the newly developed products, but all products with added value carrot pulps additive were more acceptable than the control groups. Of the samples tested, JD2 products had the best organoleptic characteristics, with 5 g of flaxseed oil, 5 g of flaxseed seeds, 60 g of carrot pulps.
